How To Cook Fish Fillet Stew Kenya
For this recipe we will need:
- Two tablespoons of oil
- One large size fish
- One large size onion
- Two large tomatoes
- One bell pepper
- One chili pepper
- Coriander leaves(dhania)
- black pepper or any other seasoning you prefer.
- Two garlic cloves (Saumu)
- One royco cube
Before you begin to cook this fillet. The first thing you will need to do is to season you fillet so as to add or enhance the flavors. For this recipe we will be seasoning with two simple ingredients; salt and black pepper.
In a heated pan or sufuria, add your sliced onions, fry them for two seconds, then add garlic to the onion stir and allow it to cook for 3mins.
After the onions are cooked, add your chopped tomatoes, bell pepper and coriander leaves. To the mixture add some salt, stir and allow to simmer for 5 minutes, or until the tomatoes are soft and tender.
Now that the tomatoes, coriander stems the bell paper are well cooked. This is the best time to thicken the mixture. You can add some 2 drops of soy sauce or coconut cream. If you love the taste of chill pepper to be strong in your fish, then you can add the chill pepper at this stage. However, if you prefer it to be mild then you can fry it with the onions in the first step.
At this point our ingredients are thick and creamy. Add ½ cup of water to the mixture, add your royco cube , cover with a lid and simmer for another two minutes.
Add your fillet to the mixture, stir slowly, then cover with a lid for 5-8 minutes until the fish is well cooked.
After the fish is cooked, sprinkle some coriander (dhania) on top and your delicacy is ready to serve.
